- Onion2
- Celery3
- Salt1 tsp
- Black pepper · cracked1 tsp
- Parsley · finely chopped½ cups
- Rosemary · finely chopped1 ½ tbsp
- Garlic4
- Chicken stock2 cups

Instructions
- Heat the oven to 350°F. Grease a 9x13-inch dish. Spread the bread on a rimmed baking sheet and bake 12–15 minutes until dry and crisp like croutons (add 5–10 minutes if the bread is fresher). Move to a large bowl.
- Cook the bacon in a large skillet over medium heat until browned and crisp. Lift it out with a slotted spoon and scatter it over the bread.
- Melt 8 tablespoons of butter into the bacon fat. Add the onion, celery, garlic and rosemary and cook, stirring often, for 6–8 minutes until the onions are very soft. Stir in the parsley, salt and pepper, then pour the mixture over the bread and stir.
- Add half the chicken stock to the bread and mix. Whisk the remaining stock with the eggs, pour over the bread and toss until combined.
- Spread the mixture in the greased dish and dot with the remaining 4 tablespoons of butter. Cover with foil and bake at 350°F for 40 minutes. Uncover and bake another 30–40 minutes, until the top is crisp and golden brown.
