Ingredients
- Drumsticks3 nos
- Toor dal1 cup
- Chili pepper5 nos
- Turmeric · powder1 tsp
- Salt½ tsp + a pinch
- Ginger · paste2 inches + 1 tbsp
- Tomato
- Ghee2 tbsp
- Mustard seed½ tsp
- Cumin½ tsp
- Cinnamon stick½ inches
- Fenugreek seeda pinch
- Asafoetida¼ tsp
- Curry10–15 nos
- Chili powder½ tsp
- Jaggery1 tbsp
- Lemon
- Cilantroa handful
Instructions
- Cut the drumsticks in half, peel them lightly, and cut them into medium pieces.
- Wash the soaked toor dal and drain the water. Put the dal in a pressure cooker with the drumsticks, slit green chili, turmeric, salt and enough water to sit about an inch above the dal. Cook on high for 1 whistle, then on medium-low for 7–8 minutes or 2–3 more whistles.
- Coarsely crush the chopped green chilies and ginger in a mortar, and dice the tomatoes.
- After the cooker releases pressure naturally, check that the drumsticks and dal are fully cooked. Blend the drumsticks with a little water until fine, then strain the purée back into the dal, discarding the fibrous parts. Whisk the dal together.
- For the tempering, heat ghee in a pan over high heat. Add mustard seeds, cumin seeds, cinnamon stick, gundu red chilies, fenugreek seeds, asafoetida, curry leaves and the crushed chili-ginger paste, and stir.
- Add the diced tomato and a pinch of salt and cook on high until softened slightly. Lower the heat, add turmeric, Kashmiri chili powder and a splash of hot water, and cook the masala for 1 minute.
- Pour the tempering into the dal and mix well. Bring the dal to a boil, then taste and adjust the salt. If using jaggery, stir it in and cook for 1–2 minutes until dissolved.
- Stir in the lemon juice and chopped coriander, mix once more, and serve.
