Easy Fig Jam
Ingredients
- Fig1 lb
- Sugar¾ cups
- Lemon · juiced1
Instructions
- Rinse and dry the figs, remove the stems, cut each fig in half and slice each half into six small pieces.
- In a heavy-bottomed pan, combine the figs, sugar, lemon juice and water. Heat over medium, stirring now and then, until it boils and the sugar dissolves.
- Once boiling, lower the heat and simmer for about 15 to 20 minutes, stirring occasionally, until the figs break down and the mixture thickens.
- Check doneness with a digital thermometer: it should reach 120°F. Or lift some on a spatula and let it drop; the last few drops should be thicker and take longer to fall.
- Turn off the heat and let the jam cool, then mash it with a potato masher or blend with a hand blender to the texture you like.
- Spoon the jam into a glass jar, let it cool to room temperature, then refrigerate. It keeps up to 2 months.
