- Sesame seed · toasted1 tbsp
- Soy sauce3 tbsp
- Butter1 tbsp
- Mirin1 tbsp
- Toasted sesame oil1 tsp

- Garlic · paste1 tsp
Instructions
- Put the 700 g cooked rice (slightly cooled) in a large bowl and mix in 1 tbsp white sesame seeds.
- Shape into triangles of about 120 g each (roughly 5-6 balls); an onigiri mold helps pack them tightly.
- Set the rice balls on a plate and let them air dry for about 5 minutes per side to form a thin, dry crust.
- Meanwhile, whisk 2 tbsp soy sauce, 1 tbsp mirin, 1 tsp sesame oil, 1 tsp miso paste and 1 tsp garlic paste in a small bowl until smooth.
- After about 10 minutes of drying, brush the sauce over one side of each rice ball.
- Pour 1 tbsp soy sauce into a small bowl and brush a thin layer over the edges of the rice balls.
- Heat a frying pan on medium and melt 1 tbsp butter. Place the rice balls sauce-side down and fry about 30 seconds to 1 minute, until nicely browned.
- Brush the other side with sauce and fry each side for about 30 seconds to 1 minute, until nicely browned.
