EASY FRENCH BREAD RECIPE

Ingredients

Instructions

  1. Add the warm water to a stand mixer bowl, then the yeast and sugar. Stir gently and let sit 2-3 minutes until the yeast is active.
  2. Add the flour, salt and oil. Keep the salt away from the yeast directly.
  3. Knead with the dough hook on medium speed for 6-8 minutes, until smooth, stretchy and slightly sticky. If kneading by hand, mix into a shaggy dough, then knead on a lightly floured surface for 8-10 minutes until smooth and elastic.
  4. Put the dough in a lightly oiled bowl, cover and let rise in a warm place until doubled, about 1 hour.
  5. Dust the counter lightly with flour and turn the dough out.
  6. Divide the dough into two equal pieces.
  7. Flatten each piece into a rectangle, fold it inward, then roll tightly into a long loaf. Pinch the seam closed and place seam side down on a baking tray.
  8. Cover loosely and let rise 30-40 minutes, until puffy and nearly doubled.
  9. Preheat the oven to 450°F (230°C). Score the tops with quick, shallow slashes using a fresh razor blade, sharp knife or bread lame.
  10. Bake on the middle rack about 20 minutes, until deep golden. Cover loosely with foil if it browns too fast.
  11. Cool on a rack for at least 20 minutes before slicing.
