Easy Glazed Peach Fritters
Ingredients
- Peach · diced2 cups
- Buttermilk⅔ cups
- Egg2
- Vanilla1 tsp
- Sugar2 ¼ cups
- Flour1 ¾ cups
- Baking soda1 tsp
- Baking powder1 tsp
- Salt¼ tsp
- Cinnamon · ground1 tsp
- Canola oil5 cups
- Milk¼ cups
Instructions
- No need to peel the peaches: cut the flesh away from the pit, dice it finely and set aside in a separate bowl.
- In a large bowl, whisk the buttermilk, eggs, vanilla and sugar for a minute or two until the eggs are well beaten.
- In another bowl, stir together the flour, baking soda, baking powder, salt and cinnamon, then add to the wet ingredients.
- Whisk until a smooth batter forms, then fold in the diced peaches so they are evenly spread.
- For the glaze, put the powdered sugar in a medium bowl and add milk gradually, whisking, until it is neither too thin nor too thick.
- Heat about 1 1/2 inches of canola oil (around 5 cups) in a large pot or deep pan over medium heat to 300°F.
- Drop batter in spoonfuls of about 1 1/2 tablespoons into the hot oil, spaced apart, 7 to 8 at a time.
- Fry for 4 to 6 minutes, turning often, until deep golden brown all over. Drain on a wire rack set over paper towels.
- While still hot, dip each fritter into the glaze, turning until well coated, then return to the rack to set.
- Eat them right away or within the first day.
