Ingredients

Instructions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment, silicone mat or non-stick foil.
  2. Fill a large bowl with cold water. Peel the potatoes and drop them in the water to keep them from browning. Once all are peeled, rinse them under cold running water and refill the bowl with fresh water.
  3. Cut the potatoes into 1-inch cubes and spread them evenly on the baking sheet. Pour the chicken broth over them and season lightly with salt.
  4. Wrap the sheet tightly with extra-wide foil, sealing all seams so the steam stays in.
  5. Bake at 425°F for 35 to 40 minutes, checking at 35 minutes, until the potatoes are fork-tender. Add more time if needed.
  6. Carefully peel back the foil away from you to avoid the hot steam.
  7. Cube the butter and melt it in a bowl or saucepan, on the stovetop or in the microwave.
  8. Grate or press the garlic and add it to the butter.
  9. Chop the dill, parsley and chives. Stir about half into the butter and keep the rest for garnish. Let the butter stand at room temperature.
  10. Once the potatoes are baked, remove the foil, stir the butter again and pour it over the potatoes.
  11. Gently toss with a rubber spatula until well coated, then transfer to a serving bowl.
