Instructions

  1. In a large bowl, stir the lukewarm water (43°C / 110°F) with the yeast and let it sit for 5 minutes until creamy.
  2. Add the sugar, oil, flour and salt and mix with a wooden spoon.
  3. Knead on a clean surface, adding a little water if too hard or a little flour if too sticky, until soft and slightly sticky.
  4. Knead for 5 minutes.
  5. Oil a large bowl, add the dough and turn it to coat, cover with plastic wrap and let rise in a warm place for 1 to 2 hours until about doubled.
  6. Punch down the dough and divide it into two equal portions.
  7. Grease two 9 by 5 inch loaf pans well.
  8. Divide one portion into 3 equal pieces, shape into ovals and place them in one pan. Roll the other portion into a log, tuck in the edges and place it in the second pan.
  9. Let the loaves rise in a warm place for 20 minutes more.
  10. Preheat the oven to 350°F (180°C).
  11. Bake for 30 to 35 minutes until golden brown, checking at about 30 minutes and loosely covering with foil if browning fast.
  12. Rest on a cooling rack for about 5 minutes, then remove from the pans.
