Ingredients

Instructions

  1. Put the flour, yeast, sugar and salt in a stand mixer and mix.
  2. Add the olive oil and water and mix until a dough forms; it may be slightly sticky, so add a little flour only if needed.
  3. Cover and let rest for 1 hour, until doubled in size. Do not punch the dough down.
  4. Preheat the oven and a pizza stone to 500°F.
  5. Divide the dough into eight pieces and cover them for 15 minutes to rise.
  6. Take one piece and keep the rest covered. Shape it into a disk with your fingers without pressing out the air, then gently roll it out to no thicker than ¼ inch.
  7. Place the disk on the hot stone (or baking sheet), close the oven door and bake for 2 minutes, until it puffs.
  8. Flip the bread and bake for another 2 minutes.
  9. Stovetop option: heat a cast iron or heavy pan over high heat for at least 3 to 4 minutes until very hot, before the pita goes in.
