Zubereitung
- Let the cooked short-grain rice cool on a parchment-lined baking sheet so the moisture evaporates.
- Soak the dried hijiki in 1 cup water for 20 minutes.
- Optional: blanch the aburaage in boiling water for a moment, flipping once, to remove the oil. Let it cool, cut it into thin strips and squeeze out the water.
- Cut the carrot into slabs, then into julienne strips.
- Heat 1 Tbsp toasted sesame oil in a large frying pan over medium heat. Add the drained hijiki, aburaage and carrot and sauté until coated with oil.
- Add 1 Tbsp sake, 1 Tbsp sugar and 3 Tbsp mirin.
- Add 3 Tbsp soy sauce and mix well.
- Add the edamame and the cooled rice. Break up the rice with a wooden spatula, then stir until no clumps remain and every grain is coated with the seasoning.
- Once heated through, serve immediately.
