- Ginger1
- Chili pepper · dried1
- Clam1 ½ lb
- Sake¾ cups
- Black pepper · ground
Instructions
- Slice 1 green onion thinly and set aside.
- Peel 1 inch of ginger, slice into thin slabs, then cut into thin strips.
- Remove the seeds from 1 dried red chili and cut it into small rounds.
- In a large frying pan, arrange 1½ lbs manila clams in a single layer and add ¾ cup sake.
- Add the ginger and chili, cover with a tight lid and bring to a boil over medium-high heat.
- Once bubbling, lower the heat to medium and steam for 3 to 5 minutes (2 to 3 minutes for smaller clams), until all shells open. Shake the pan occasionally so the clams do not overlap. Discard any clams that have not opened.
- Remove the lid, add the sliced green onion and freshly ground black pepper if you like.
- Transfer the clams and the remaining sauce to a serving bowl and serve right away.
