Ingredientes

Preparación

  1. Slice 1 green onion thinly and set aside.
  2. Peel 1 inch of ginger, slice into thin slabs, then cut into thin strips.
  3. Remove the seeds from 1 dried red chili and cut it into small rounds.
  4. In a large frying pan, arrange 1½ lbs manila clams in a single layer and add ¾ cup sake.
  5. Add the ginger and chili, cover with a tight lid and bring to a boil over medium-high heat.
  6. Once bubbling, lower the heat to medium and steam for 3 to 5 minutes (2 to 3 minutes for smaller clams), until all shells open. Shake the pan occasionally so the clams do not overlap. Discard any clams that have not opened.
  7. Remove the lid, add the sliced green onion and freshly ground black pepper if you like.
  8. Transfer the clams and the remaining sauce to a serving bowl and serve right away.
