- Zucchini6
- Rice½ cups
- Onion1
- Parsley½ cups
- Bell pepper1
- Ground beef½ lb
- Tomato paste3 tbsp
- Olive oil5 tbsp
- Salt1 tsp
- Black pepper½ tsp
- Aleppo pepper1 ½ tsp
- Mint · dried2 tsp
- Tomato2
- Yoghurt
Instructions
- Cut off the top of each zucchini and trim a little off the bottom so they stand upright. Hollow them out with an apple corer or a small spoon.
- In a bowl, mix the rice, onion, parsley, green bell pepper, ground beef, tomato paste, olive oil, salt, black pepper, Aleppo pepper and dried mint until well combined.
- Stuff the zucchini loosely, leaving ½ inch (about 1 cm) empty at the top, because the rice expands as it cooks.
- Put a piece of tomato on top of each zucchini.
- Stand the stuffed zucchini upright in a pot.
- In a bowl or measuring jug, mix the extra olive oil, tomato paste, Aleppo pepper, dried mint and boiling water. Pour over the zucchini in the pot and cover with a lid.
- Cook over medium-high heat until it reaches a simmer, about 20 minutes.
- Uncover and cook for 1 to 1½ hours, until a knife slides easily into the side of a zucchini.
- Serve warm with yogurt.
