Easy Lemon Blueberry Galette
Ingredients
- Blueberry4 ½ cups
- Sugar6 tbsp
- Salt½ tsp
- Flour2 tbsp + 1 ¾ cups
- Cornstarch1 tbsp
- Vanilla1 tsp
- Lemon3 tbsp
- Butter¾ cups
- Egg1
- Ice cream
Instructions
- Make the crust first if you are using homemade dough. Cut the butter into small cubes and freeze for 15 minutes.
- Put the cold butter, flour and salt in a food processor and pulse until fine crumbs form.
- Add the ice-cold water one tablespoon at a time, pulsing after each, until a dough ball forms.
- Shape the dough into a disk, wrap it well and refrigerate for 1 hour. (The dough can be made ahead.)
- Make the filling: in a large bowl, combine the sugar, salt, vanilla, flour and cornstarch. Add the zest of 2 large lemons and about 3 tablespoons of lemon juice, then toss with the blueberries until well coated.
- Preheat the oven to 375°F. Roll the chilled dough on a silicone mat into a circle about 12 inches across, handling it as little as possible.
- Pile the filling in the center, then fold the edges of the dough up and over, pleating them toward the middle.
- Beat the egg and brush it over the crust. Sprinkle the large sugar around the edges if you like.
- Slide the mat onto a large baking sheet and bake at 375°F for 35 to 40 minutes, until the crust is golden brown.
- Let the galette cool for at least 20 to 30 minutes before serving, as the filling is very hot.
