Easy Lemon Pound Cake Recipe!
Ingredients
- Butter1 ¼ cups
- Sugar2 cups
- Egg4
- Greek yoghurt1 cup
- Lemon8 tsp + 2–4 tbsp
- Vanilla1 tsp
- Flour2 cups
- Baking powder2 tsp
- Salt¼ tsp
Instructions
- Preheat the oven to 350°F (177°C). Grease and flour a 8- or 9-inch (21 or 23 cm) Bundt pan, or two 8½-inch (22 cm) loaf pans, or use baking spray.
- In a large bowl, beat the softened butter and sugar on high speed for 3 to 4 minutes, until fluffy and creamy. Add the eggs, lemon extract, vanilla extract, Greek yogurt and lemon juice, then beat for about 3 minutes, until the eggs are well mixed. The batter may look separated; this is normal.
- In another bowl, combine the flour, baking soda, baking powder and salt. Sift into the butter mixture and mix on low speed just until combined. Add the lemon zest and mix for about 20 seconds.
- Pour the batter into the prepared pan(s), dividing evenly for loaves, and level the top. Bake the Bundt cake at 350°F (177°C) for about 40 minutes, or the loaves for about 28 minutes, until a toothpick inserted in the center comes out clean.
- Turn the cake out onto a cooling rack and let it cool completely.
- Whisk the confectioners' sugar with a couple of tablespoons of lemon juice, adding more juice for a thinner glaze. Drizzle over the cooled cake.
