Easy Lofthouse Cookies Recipe
Ingredients
- Flour2 ¼ cups
- Baking powder½ tsp
- Baking soda¼ tsp
- Cornstarch1 tbsp
- Salt½ tsp
- Butter1 cup
- Sugar3 cups
- Egg1
- Sour cream¼ cups
- Vanilla2 ½ tsp
- Almond extract¼ tsp
- Milk2 tbsp
- Food coloring
- Sprinkles
Instructions
- Whisk together the flour, salt, baking powder, baking soda and cornstarch in a bowl and set aside.
- Cream the butter and sugar until fluffy, then beat in the egg, vanilla and almond extract if using. Mix in the sour cream until combined, scraping down the bowl as needed.
- Mix the dry ingredients into the wet on low until just combined, scraping down the bowl to incorporate any loose flour. Shape into a disk, wrap in plastic and chill for 1 hour.
- Preheat the oven to 375°F. Roll the dough to 1/4 inch thick and cut with a 2 1/2–3 inch round cutter. Re-roll the scraps and cut the rest.
- Place the cookies on parchment-lined baking sheets and bake at 375°F for 8–9 minutes, until the bottom edges just start to colour. Cool completely.
- While the cookies bake, cream the butter, then mix in the powdered sugar and vanilla. Drizzle in the milk on low, then beat on high until smooth. Add food colouring a drop at a time if using.
- Spread a thin layer of buttercream on the cooled cookies and add sprinkles if desired.
