Ingredients
- Vegetable oil¾ cups
- Maple syrup¾ cups + 2 tbsp + ⅓ cups
- Sour cream¾ cups
- Egg3
- Vanilla1 ½ tsp
- Flour2.08 cups
- Baking powder1 ½ tsp
- Baking soda1 ½ tsp
- Salt¼ tsp
- Apple · peeled diced3 cups
- Butter¼ cups
- Cinnamon · ground½ tsp
- Nutmeg · ground¼ tsp
- Almond · sliced⅓ cups
- Heavy cream1 cup
Instructions
- Preheat the oven to 350°F (177°C). Spray a 9-inch spring form or regular pan on the sides with baking spray and line the bottom with parchment paper.
- In a large bowl, beat the maple syrup, oil (or melted butter), eggs, sour cream and vanilla until smooth.
- In another bowl, combine the flour, baking soda, baking powder and salt. Sift them into the batter and mix on low speed for about 1 minute, just until no dry flour shows.
- Fold in 2 cups of diced, peeled apples. Pour the batter into the prepared pan and scatter the remaining 1 cup of diced apples over the top.
- For the streusel, cut the cold butter into small pieces and put it in a bowl with the 1/3 cup flour, cinnamon and nutmeg. Cut the butter into the flour with a pastry blender or two forks until small crumbs form.
- Stir in the sliced almonds, then pour in the 2 tbsp maple syrup and toss lightly until no dry flour remains. Sprinkle the crumble over the cake.
- Bake at 350°F (177°C) for about 1 hour to 1 hour 10 minutes, checking from 55 minutes. It is done when a toothpick inserted into the center comes out clean.
- Remove the cake from the pan and let it cool on a wire rack.
- For the optional whipped cream, whisk the chilled heavy cream with 1/3 cup maple syrup on high speed for 4 to 5 minutes, until stiff peaks form.
