Easy Meringues
Ingredients
- Egg3
- Sugar200 g + 1 tbsp
- Berries300 g
- Cream250 ml
- Vanilla1 tsp
- Fresh berries
- Coulis
Instructions
- Preheat the oven to 120°C (100°C fan) and line a large tray with baking paper.
- Put the egg whites in a large, clean bowl, after separating them in a separate bowl so no yolk gets in.
- Whisk the egg whites to stiff peaks, adding the sugar 1 tsp at a time while still whisking.
- Keep whisking for 1-2 minutes.
- Spoon five dollops of the mixture onto the tray.
- Bake for 40-45 minutes, until the meringues feel crisp and hard on the outside.
- Meanwhile, make the coulis: heat the berries and sugar in a pan over medium heat, stirring well, until the fruit bubbles, the sugar dissolves and the mixture thickens. Pour into a bowl and let cool.
- When the meringues are baked, leave them in the oven with the door shut for 30 minutes, then take them out and let them cool completely.
- Lightly whisk the cream, sugar and vanilla together to soft peaks in a new bowl.
- Top each meringue with a dollop of cream, fresh berries and a drizzle of cooled coulis.
