Easy Millionaire's Shortbread Recipe
Ingredients
- Butter1 ½ cups
- Sugar½ cups
- Egg1
- Vanilla2 tsp
- Salt1 tsp
- Flour2 cups
- Sweetened condensed milk1 can
- Brown sugar1 cup
- Corn syrup¼ cups
- Chocolate1
- Heavy cream⅓ cups
Instructions
- Preheat the oven to 350°F (175°C) and line a 9x9 inch (23 cm) baking dish with parchment or foil.
- Beat the butter, sugar and salt at medium-high speed until light and fluffy, about 3 minutes. Add the vanilla and egg yolk and mix until combined.
- On low speed, add the flour in batches and mix until just combined. Scrape down the bowl, then press the dough evenly into the pan with no gaps.
- Bake for about 22 minutes, until the edges are light golden brown.
- While the base bakes, combine the condensed milk, butter, brown sugar, corn syrup and salt in a small pot. Melt over medium heat, whisking occasionally, about 3 minutes.
- Whisk constantly until the caramel bubbles, darkens slightly and reaches 225°F (107°C) on an instant-read thermometer, 6-10 minutes. It will thicken and pull away from the sides. Remove from heat and whisk in the vanilla.
- Pour the hot caramel over the hot shortbread and smooth to the edges. Cool to room temperature so it sets.
- Microwave the chocolate and cream in a bowl in 20-second bursts, stirring between, until smooth, about 60 seconds total. Pour over the cooled caramel and smooth evenly. Sprinkle with salt if desired, then chill for at least 2 hours.
- Lift the slab out with the parchment. Warm a knife under hot water, dry it, and slice into bars, rewarming and wiping the knife as needed.
