Easy Mini Chocolate Donuts
Ingredients
- Milk1 cup
- Yeast2
- Sugar1 ¼ cups
- Egg2
- Butter · melted2 oz
- Vanilla2 tsp
- Flour3 cups
- Salt¼ tsp
- Vegetable oil
- Chocolate spread
- Cinnamon · ground2 tsp
Instructions
- Put the milk, sugar and yeast in the mixer bowl fitted with the dough hook. Whisk together and rest for 7-8 minutes until the yeast forms a puffy foam on top.
- In a large bowl, whisk together the flour and salt. In a small bowl, whisk together the eggs, vanilla and melted butter.
- Add the flour mixture and the egg mixture to the mixer bowl.
- Knead on low speed (speed 2 on a KitchenAid) for 8 minutes.
- Transfer the dough to an oiled bowl, turn to coat, cover and let rise until doubled, about 1-2 hours. Or slow-rise overnight in the fridge.
- Roll the dough on a lightly floured surface to about 1/2 inch thick. Cut into 1 1/2-inch rounds and place on a parchment-lined tray. Re-roll the scraps once and cut more rounds, as re-rolling makes the dough denser. Cover and rest for 30 minutes until slightly puffy (not doubled).
- Meanwhile, fill a piping bag fitted with a star tip with Nutella, filling it only halfway. Set a cooling rack over a baking tray. Mix the cinnamon and sugar in a shallow bowl.
- Heat the oil over medium heat to 350°F.
- Fry about 6-7 donuts at a time until golden all over, about 3 minutes. Lift out with a spider strainer and let excess oil drip back into the pot.
- Toss the hot donuts in the cinnamon sugar until coated and place on the rack.
- Pierce the side of each donut with a skewer or knife to make room for the filling.
- When the donuts have cooled to room temperature, pipe in the chocolate filling. Serve immediately.
