Easy Mung Bean Mooncake Recipe
Ingredients
- Mung bean · skinless200 g
- Butter56 g
- Sugar100 g
- Honey63 g
- Salt¼ tsp
Instructions
- Soak the skinless mung beans overnight, then rinse under running water and drain well.
- Put the drained beans and 1.25 cups of water in a nonstick pot. Bring to a simmer over medium heat, then lower to the lowest heat and simmer for 20 minutes. (With skin-on beans, it takes about 1.5 hours to soften and the pastry turns dark green.)
- Mash the cooked beans with a rubber spatula until smooth. (Skin-on beans need a blender.)
- Add the sugar, honey, salt and butter to the paste. Stir over medium-low heat for 15 minutes to evaporate excess moisture.
- When the paste no longer sticks to the pot, remove it and let it cool to lukewarm, covered so it doesn't form a skin.
- Divide into 12 pieces and roll each into a ball.
- Press each ball in a mooncake mold onto a clean board with steady pressure, hold for a few seconds, then release.
