Instructions
- Cut the mutton leg and prick it all over with a knife.
- In a bowl, whisk together the thick yogurt, green chilli paste, crushed ginger garlic, crushed fried onion, Kashmiri red chilli powder, turmeric, red chilli powder, roasted and crushed coriander seeds, roasted and crushed cumin seeds, black pepper powder, roasted gram flour, pink salt, orange food colour (if using), corn oil and lemon juice.
- Add the mutton pieces and coat them well with the marinade.
- Cover and marinate overnight.
- Lay foil and baking paper on a work surface. Make a bed of onion, garlic, cloves, black peppercorns, bay leaf, cinnamon stick and fresh coriander. Place the marinated mutton on top, then wrap it tightly in the baking paper and aluminium foil.
- Place a steam rack in a large pot and add water below the rack. Set the mutton packet on the rack, cover and steam on low heat for 3 to 3.5 hours.
- Open the foil and paper carefully and remove the mutton. Discard the whole spices and transfer the remaining masala from the packet into a saucepan.
- Add the remaining marinade, the corn oil and the water to the saucepan. Cook over medium heat for 2-3 minutes, mashing well, until it becomes a spicy sauce.
- Spread the spicy sauce over the steamed leg. Top with fresh coriander, green chilli and ginger, and serve with naan, onion, cucumber, lemon wedges and the sauce.
