Ingredients
- Onion¼
- Bell pepper¼
- Mushroom2
- Sausage2
- Extra virgin olive oil1 tbsp
- Spaghetti4 oz
- Butter½ tbsp
- Salt½ tsp
- Ketchup3 tbsp
- Worcestershire sauce1 tsp
- Black pepper · ground
Instructions
- Cut the onion into thin slices, the green bell pepper into thin strips (halve it widthwise first if long), and the mushrooms into thin slices. Cut the Japanese sausages diagonally about ¼ inch (6 mm) thick.
- Heat the pot on medium-high (or Mode II, 600W on an electric pot). Add 1 Tbsp extra virgin olive oil, then stir-fry the sausages and onion until slightly tender and charred, stirring often.
- Add 2 cups water and bring to a boil, covering with a lid to speed it up.
- Once boiling, add ¼ tsp salt. Break 4 oz spaghetti in half, add to the water and push it fully under. Cook uncovered for 11 minutes.
- After 7 minutes of cooking, add the bell pepper and mushrooms.
- At the 10-minute mark (1 minute left on the timer), reduce heat to medium (or Mode I, 250W). Use a ladle to remove as much pasta water as possible.
- Add ½ Tbsp unsalted butter if using and stir well.
- Add 3 Tbsp ketchup, 1 tsp Worcestershire sauce and freshly ground black pepper. Mix well, then add up to ¼ tsp salt to taste.
- Serve immediately, as it is best eaten fresh.
