Easy, No-Bake Lemon Tiramisu
Ingredients
- Mascarpone cheese16 oz
- Lemon½ cups + 1 + ⅔ cups
- Vanilla4 tsp
- Sugar2 ¼ cups
- Cream3 cups
- Lemon curd2 ¼ cups
- Limoncello liqueur½ cups
- Lady finger cookies45
- Egg6
- Butter½ cups
Instructions
- Make 1 recipe of homemade lemon curd (the creator's own recipe, not included here) and chill it completely in the fridge. Split it between the filling and the topping.
- Put the chilled mascarpone in a large bowl with the confectioners' sugar, vanilla and lemon zest. Beat on medium speed for 3 to 4 minutes until thick and creamy.
- Gradually add the well-chilled heavy cream, about 1/2 cup at a time, whisking after each addition, then keep whisking for a few minutes until thick and fluffy.
- Fold in 1 cup of chilled lemon curd until fully combined.
- Layer half of the 45 lady finger cookies, each briefly dipped in a mix of 1/2 cup lemon juice, 1/2 cup limoncello and 1 cup water so they are soft outside but not soggy, in a casserole dish. Spread half the filling evenly to the edges.
- Add a second layer of dipped cookies, then the rest of the filling. Spread the remaining lemon curd (about 1 1/4 cups) over the top and smooth it.
- Chill for at least 6 hours or overnight.
- Whip 1 cup heavy cream with 1/4 cup confectioners' sugar and 1 tsp vanilla until stiff peaks form. Pipe over the top, garnish with lemon slices and cut into squares to serve.
