Easy, No-Bake Peach Tiramisu
Ingredients
- Peach8 + ½ cups
- Sugar2 ½ cups
- Cream cheese16 oz
- Vanilla1 tsp
- Salt1 pinch
- Cream3 cups
- Lady finger cookies50–60 pieces
- Mint
Instructions
- Wash and dry the peaches. Dice about 4 medium peaches (about 4 cups) for the filling and cut the other 4 into large chunks for the puree.
- Blend the chunked peaches with the 1/2 cup sugar and the peach liqueur (or juice or water) until smooth with no chunks.
- Set aside about 1/2 cup of the puree for the filling. Pour the rest into a medium shallow dish for dipping.
- Beat the softened cream cheese (or cold mascarpone) until smooth. Add the powdered sugar, vanilla and sea salt and mix until the sugar is incorporated.
- Mix in 1 cup of the cream for about a minute to loosen the mixture.
- Switch to the whisk, add the remaining 2 cups of cream and whisk until stiff peaks form, about 5 minutes, starting slow and speeding up as it thickens.
- Fold the reserved 1/2 cup of puree gently into the cream.
- Dip 4 to 5 ladyfingers at a time into the puree, coat well, tap off the excess and lay them in one layer in the dish.
- Spread about 3 cups of the cream over the cookies to the edges, pressing lightly so it fills the gaps.
- Scatter about 1 cup of diced peaches over the cream. Repeat the cookie, cream and peach layers until the dish is full, then finish with cream.
- Garnish with diced peaches and mint sprigs. Chill for a few hours, or overnight for best results, then scoop to serve.
