Easy Okra with Ginger Soy Sauce | Japanese Home Cooking #shorts #okrarecipe
Ingredients
- Okra9 oz
- Salt1 tsp
- Soy sauce2 tbsp
- Ginger½ tsp
Instructions
- Bring a medium pot of water to a boil over medium-high heat.
- Make the ginger soy sauce: grate 1 inch of ginger and measure 1/2 tsp of grated ginger with its juice. In a large bowl, mix 2 Tbsp soy sauce with the ginger. Taste and add more ginger or ginger juice if you like. Set aside.
- Cut the stems off 9 oz okra, leaving the top mostly intact, and peel off the tough calyx around the top.
- Rub the okra with 1 tsp Diamond Crystal kosher salt (or half that for table salt) between your hands and the cutting board for 15 to 20 seconds. Do not rinse.
- Blanch the okra in the boiling water: 1 to 2 minutes if small, 2 to 3 minutes if medium, 3 to 4 minutes if large. Drain as soon as tender, without overcooking.
- Cut the okra diagonally into bite-sized pieces, toss them with the ginger soy sauce and serve chilled or at room temperature.
