Ingredients

Instructions

  1. Chop the cauliflower into bite-sized pieces and rice them in a blender or food processor. If using a blender, rice on the lowest setting a little at a time. Rinse the blender when finished.
  2. Chop the broccolini into small pieces.
  3. Preheat the oven to 350F (about 180C).
  4. Heat a sauté pan over medium heat. Add the panko and parsley, season with salt, and toast until golden brown. Set aside.
  5. Return the pan to the heat and drizzle in olive oil. Sauté the broccolini for a couple of minutes. Add the riced cauliflower and thyme, season with salt, and sauté for 5-7 minutes.
  6. Blend the cashews, 1 1/2 cups water, 1/4 tsp pink salt, garlic powder, onion powder and nutritional yeast in a high-powered blender until smooth. If your blender is not high-powered, soak the cashews overnight or boil them in water first.
  7. Transfer the cauliflower mixture to a baking dish. Pour over the cashew sauce and sprinkle with the panko.
  8. Bake for 15 minutes.
