Preparación
- Heat 2 tablespoons of the oil in a 10-inch high-sided skillet or braiser over medium-high until shimmering, about 1 minute. Add the onion, celery, bell pepper and a pinch of salt, and cook, stirring often, until softened, 5–6 minutes.
- Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds.
- Add the remaining 2 tablespoons oil and let it heat for 30 seconds.
- Add the sausage and cook, stirring occasionally, until slightly browned, 3–4 minutes.
- Add the shrimp and cook, stirring occasionally, until just coated in oil, 1–2 minutes.
- Add the Cajun seasoning, thyme, paprika, black pepper and cayenne. Cook, stirring constantly, until fragrant, 30–60 seconds.
- Add the tomatoes with their juices and cook, stirring occasionally, until slightly bubbling, 2–3 minutes.
- Add the broth and rice and stir to combine. Cover, bring to a boil over high heat, then reduce to low and simmer, undisturbed, for 10 minutes.
- Uncover and stir in the black-eyed peas. Cover again and cook, undisturbed, until the rice is tender, fluffy and cooked through, 10–15 minutes. Remove from heat and let stand, covered, for 5 minutes. Uncover and fluff the rice with a large fork.
