Easy Peach Cobbler Recipe for Summer!
Ingredients
- Peach6–7
- Lemon2 tbsp
- Vanilla3 tsp
- Sugar½ cups
- Flour2 tbsp + 2 cups
- Cornstarch2 tbsp
- Cinnamon · ground2 tsp
- Salt1 tsp
- Butter¾ cups
- Baking soda1 tsp
- Baking powder2 tsp
- Buttermilk1 cup
- Ice cream
Instructions
- Preheat the oven to 375°F (190°C) and get a large casserole dish ready.
- Slice each peach in half, then into thin slices about ¼ inch (6mm) thick, and put them in the dish.
- Add the lemon juice, vanilla, sugar, cinnamon, flour, cornstarch and salt, and toss until the peaches are evenly coated with no dry patches.
- Dot the ¼ cup of butter, cubed, over the peaches.
- Freeze the ½ cup cubed butter for a few minutes until ice cold.
- Pulse the flour, sugar, baking soda, baking powder and salt in a food processor. Add the chilled butter and pulse until crumbly, about 30 seconds to 1 minute. (Without a processor, rub the butter in with a pastry cutter or two forks.)
- Add the buttermilk and vanilla and pulse about 30 seconds to 1 minute until a thick batter forms.
- Drop large spoonfuls of batter over the peaches, spaced evenly across the dish.
- Bake at 375°F (190°C) for 40 to 45 minutes, covering with foil after 25 minutes, until the biscuits are golden brown and the filling is cooked.
- Cool on a wire rack for 30 minutes so the filling can thicken before serving.
