Ingredients

Instructions

  1. In a large bowl, stir the flour with a pinch of salt. If using plain all-purpose flour, add the baking powder too.
  2. Add the yogurt and stir with a wooden spoon, then mix with one hand until it forms a rough ball.
  3. Turn the dough onto a lightly floured surface and knead for 3 to 5 minutes until smooth. Dust with a little flour if it is too sticky.
  4. Let the dough rest for 10 minutes.
  5. Divide the dough into 4 equal pieces and roll each into a ball.
  6. On a floured surface, roll each ball into a flat circle about 16 to 18 cm (6 to 7 inches) across, flipping it and dusting with flour as you go.
  7. Heat a pan over medium-high heat and lightly coat it with olive oil spray or oil. Cook one flatbread for 2 to 3 minutes, until bubbles appear.
  8. Lift an edge to check for golden brown, then flip with a spatula and cook the other side for 1 to 2 minutes, until it puffs up and is golden.
  9. Move the flatbread to a plate and repeat with the rest. Cover with a clean kitchen towel or foil to keep them warm.
