Ingredients

Instructions

  1. Sift the flour into a large bowl or stand mixer bowl. Add the yeast, sugar and salt and mix. Pour in the olive oil and water and mix until a rough dough forms.
  2. Knead by hand on a floured surface for 10 minutes, or with a dough hook until smooth and elastic.
  3. Put the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1 hour, or until doubled.
  4. Punch down the dough, divide into 8 pieces of about 100 g each, and shape into smooth balls. Cover and rest for 10 to 15 minutes. Roll each ball on a floured surface into a circle about 1/2 cm (1/4 inch) thick.
  5. Oven method: preheat the oven to 485°F (250°C) or as hot as it goes, with an upside-down baking tray inside. Once hot, remove the tray, lay 3 or 4 pitas on it, bake 3 minutes, flip and bake 1 minute more until puffed and lightly golden. Cover at once with a towel.
  6. Skillet method: heat a cast-iron or heavy pan over medium-high heat until very hot. Cook one pita at a time for 1 to 2 minutes per side, until puffed with golden spots. Cover each one as it comes off the pan.
  7. Pizza oven method: preheat to 600 to 700°F (315 to 370°C). Bake the rolled pitas directly on the oven surface for 30 to 60 seconds until puffed and golden, flip and cook a few seconds more, then cover immediately with a towel.
