Easy Pork Tofu Soup | Easy College Meals #recipe #chickenrecipe #weeknightdinners
Ingredients
- Scallion2
- Ginger1 inch
- Toasted sesame oil2 tsp
- Ground pork4 oz
- Salt0.13 tsp
- Black pepper · ground0.13 tsp
- Sake1 tbsp
- Tofu½
- Chicken stock1 cup
- Soy sauce2 tsp
- Potato starch1 tbsp
- White pepper · ground
Instructions
- Separate the green onions into white and green parts. Thinly slice them on the diagonal and set the green parts aside for garnish. Grate 1 inch of ginger and measure 1 tsp of grated ginger with its juice.
- Heat a pot over medium heat, then add 2 tsp toasted sesame oil. When the oil is hot and begins to smoke, add 4 oz ground pork, spread it evenly and let it sear undisturbed until a crust forms. Season with 1/8 tsp Diamond Crystal kosher salt (half that by weight for table salt) and 1/8 tsp freshly ground black pepper.
- Once a crust forms, add 1 Tbsp sake and scrape the bottom of the pot with a wooden spatula. Add the grated ginger and the white part of the green onions and mix.
- Cook until the pork is no longer pink. Add 1 cup chicken stock and 1 cup water, stir, then add 2 tsp soy sauce. Bring to a simmer over medium heat.
- When simmering, tear 1/2 block (7 oz / 200 g) medium-firm tofu into bite-sized pieces with your hands and add them to the pot. Let the tofu warm through.
- Taste and add salt if needed.
- Mix 1 Tbsp potato starch or cornstarch with 2 Tbsp water to make a slurry. Stir again just before pouring, drizzle it evenly into the soup, and stir until the broth thickens slightly. Turn off the heat.
- Serve in bowls, garnish with the green part of the onions and sprinkle with white pepper.
