- Buttermilk½ cups
- Scallion · chopped4
- Chicken sausage · diced3 oz
- Cheddar cheese · shredded1 cup
- Egg6
- Milk¾ cups

Instructions
- Grate the cold butter on the large holes of a box grater into a large bowl. Add the flour, baking powder and salt and rub together with your fingertips.
- Add the cold buttermilk and mix until a dough forms. Do not knead. Split the dough into 2 equal portions, shape each into a circle, wrap in plastic and chill in the fridge for 30 minutes.
- Whisk the eggs, milk (or cream), salt, pepper and chicken bouillon powder (if using) together in a large bowl.
- Preheat the oven to 375°F (190°C).
- On a well-floured surface, roll one piece of dough into a large circle about 13 inches (33 cm) wide.
- Lay the dough over a 9-inch pie pan, press it to cover the pan completely and the sides, then trim the excess from the rim.
- Spread the diced sausage, 3/4 cup of the cheese and the green onions over the crust. Pour in the egg mixture and sprinkle the remaining cheese on top.
- Bake carefully for about 35–40 minutes, until the centre is set.
- Let it cool for about 5 minutes before slicing.
