Easy Roxakia Recipe - Chocolate Vanilla Pastries!
Ingredients
- Sugar3 ¼ cups
- Orange
- Vanilla1 tsp
- Cinnamon stick1
- Yeast2 tsp
- Flour3
- Baking powder1 tsp
- Salt¼ tsp
- Orange juice½ cups + 3–4 tbsp
- Vegetable oil¾ cups
- Cocoa powder½ cups
- Cinnamon · ground1 tsp
- Walnut · ground60 g
Instructions
- Preheat the oven to 350°F (175°C) and line 2 baking trays with parchment paper.
- Make the syrup: in a pot over medium heat, combine the sugar, orange zest, water, cinnamon and orange juice and cook until the sugar dissolves. Take off the heat, stir in the vanilla extract, and let it cool completely.
- In the bowl of a stand mixer fitted with the dough hook, add the yeast, water and sugar, whisk, and let it proof for 6 to 8 minutes.
- In a large bowl, whisk together the flour, salt, baking powder and orange zest.
- Add the orange juice, oil and flour mixture to the yeast mixture and knead for 3 to 5 minutes until smooth. If it is too sticky, add a little more flour.
- Divide the dough into 2 portions, with one about 100 grams smaller than the other. The smaller portion will be the chocolate dough.
- Put the smaller portion back in the mixer bowl, add the cinnamon, cocoa powder and orange juice, and knead until combined.
- On a lightly floured surface, roll the vanilla dough into a rectangle about 12 by 10 inches (30 by 25 cm).
- Roll the chocolate dough into a log about 12 to 13 inches (30 to 33 cm) long.
- Place the chocolate log along the longer edge of the vanilla rectangle and roll it up tightly.
- Cut the roll into half-inch (1.25 cm) slices and shape each into a circle.
- Arrange the rounds on the baking trays and bake for about 25 to 30 minutes until golden.
- As soon as they come out of the oven, move them all into the same pan and pour the syrup over them. Flip them and let them soak for an hour, then transfer to a platter.
