- Olive oil2 tbsp
- Cajun seasoning4 tsp
- Jerk seasoning1 tbsp
- Garlic · minced4
- Parsley · chopped2 tbsp
- Thyme4
- Lemon · zested juiced1
- Butter · melted1 stick + ¼ cups
Instructions
- Boil the corn and potatoes in a pot of water over medium-high heat for 10 minutes. Drain and transfer to a large bowl.
- Add the shrimp, sausage, oil, Cajun seasoning, jerk seasoning, minced garlic, parsley, thyme leaves, and lemon zest and juice to the bowl. Toss well.
- Cut 4 sheets of foil about 12 inches square and 4 sheets of parchment about 11 inches square. Place one parchment sheet on each foil sheet. Divide the corn mixture and butter pats evenly among them, then wrap each packet tightly so no juices escape.
- Preheat a grill to medium-high (about 400°F/200°C) with one section unlit for indirect heat. Place the packets over indirect heat and cook for about 20 minutes, until the potatoes and corn are tender and the shrimp is pink with an internal temperature of 145°F (63°C). If using an oven at 400°F (200°C), check after 15 minutes.
- Let the packets cool for 5 minutes before opening.
- If you like, stir the melted butter with 1 teaspoon Cajun seasoning and spoon a little over each packet.
