Easy Singapore Noodles
Ingredients
- Noodle · dried100 g
- Soy sauce3 tbsp
- Shaoxing wine3 tbsp
- Curry · powder3 ½ tsp
- Sugar1 tsp
- White pepper½ tsp
- Chicken thigh · skinless boneless150 g
- Salt¼ tsp
- Plain oil2 tbsp
- Egg2
- Bacon100 g
- Onion½
- Garlic3
- Bell pepper1
- Bean sprout1
- Spinach1
Instructions
- Mix the sauce ingredients in a small bowl.
- Toss the chicken with its seasonings in a bowl.
- Soak the noodles according to the packet, usually in boiling water for 3 to 5 minutes, then drain.
- Heat a little of the oil in a large non-stick pan over medium-high heat. Pour in the beaten egg to make a thin omelette. When the surface is set, after about 30 seconds, slide it onto a board and let it cool. Roll it up and slice into 7 mm (1/3 inch) strips, then separate them into ribbons.
- Heat the remaining oil in the same pan over high heat. Add the bacon and cook for 1 minute. Add the onion and cook until wilted and the bacon is light golden, about 2 minutes.
- Add the chicken and sear its surface. Then add the garlic and capsicum and cook for another 2 minutes, until the chicken is cooked through.
- Add the baby spinach, bean sprouts and noodles, then the sauce. Toss with two spatulas for 1½ minutes, until the sauce coats the noodles.
- Gently fold in the egg ribbons just to spread them out, and serve immediately.
