- Toasted sesame oil3 tbsp
- Chili flake · crushed½ tsp
- Honey3 tbsp
- Soy sauce3 tbsp
- Soba noodle · dried7 oz
- Scallion2
- Cilantro1 handful
- Sesame seed · toasted1 tbsp
Instructions
- Bring a large pot of water to a boil (no salt needed).
- In a small saucepan, combine 1 Tbsp neutral oil, 3 Tbsp toasted sesame oil and ½ tsp crushed red pepper flakes. Heat over medium for 3 minutes until the oil sizzles, without burning the chilli. Remove from heat and cool for 1–2 minutes.
- Whisk in 3 Tbsp honey until fully dissolved, then whisk in 3 Tbsp soy sauce. Set the dressing aside.
- Cook 7 oz dried soba noodles in the boiling water, stirring occasionally, for about 30 seconds less than the package time (about 3 minutes 30 seconds if the package says 4 minutes), until al dente.
- Meanwhile, thinly slice 2 green onions and chop the leaves of 1 handful (0.7 oz / 20 g) cilantro, discarding the stems.
- Drain the noodles and rinse well under cold running water until cool, then drain thoroughly.
- Put the noodles in a large bowl, pour over the dressing and add the green onions, cilantro and 1 Tbsp toasted white sesame seeds. Toss to combine.
- Serve chilled or at room temperature.
