Ingredients

Instructions

  1. In a large bowl, stir the water, sourdough starter and olive oil together with a fork.
  2. Add the flour, then the salt, and stir with a silicone spatula until a shaggy dough forms. Scrape the sides and knead briefly with lightly floured hands until combined; lumps are fine.
  3. Cover and rest for 1 hour in a warm place (about 72°F / 22°C).
  4. Wet your hands with warm water. Lift one edge of the dough from the bottom, stretch it over the centre and press it down. Turn the bowl a quarter turn and repeat 3 to 5 more times, for 4 to 6 folds in total. Shape into a ball, return to the bowl and cover tightly.
  5. Rest 30 minutes, then repeat the folds three more times, resting 30 minutes between each set, for 4 sets in total.
  6. Oil a large bowl lightly, add the dough and cover. Let it rise in a warm place (about 72°F / 22°C) until it has grown by 50% to 75%, about 3 to 5 hours. It can be refrigerated for up to 24 hours at this stage.
  7. Divide the dough into 4 equal pieces (about 275 g each). Shape each into a tight ball by pinching the edges into the centre, then turn it seam-side down and tighten it by pulling it towards you while rotating, until round.
  8. Place each ball on a quarter-sheet tray, dust lightly with flour, cover and let rise 2 more hours until puffed.
  9. Place an oven rack in the bottom third and preheat the oven to 500°F (260°C). Brush a large baking sheet generously with olive oil.
  10. Transfer a dough ball to a well-floured surface, flour the top, then flip it seam-side down. Press the centre with your fingertips to leave a puffy rim 3/4 to 1 inch (2 to 2.5 cm) wide, then stretch to a 10 to 11 inch (25 to 28 cm) circle, keeping the rim. Shake off excess flour.
  11. Place the dough on the oiled sheet and reshape into a circle. Add sauce, cheese and toppings, brush the crust with a little olive oil, and bake 8 to 10 minutes, until golden. Repeat with the remaining dough.
