- Scallion2 stalks
- Soy sauce4 tbsp
- Dark soy sauce2 tbsp
- Shaoxing wine2 tbsp
- Rock sugar1 tbsp
- Cinnamon stick1

Instructions
- Pat the chicken dry. Using kitchen shears, remove the backbone, cut a small notch in the breastbone and flatten the chicken.
- Heat the oil in a large pan over high heat. Sear the chicken skin-side down for about 1 minute until lightly golden, then flip and sear the other side for another minute.
- Add the ginger and scallions to the pan. Pour in the water, soy sauce, dark soy sauce and Shaoxing wine. Add the rock sugar, cinnamon stick, star anise and bay leaves.
- Cover and cook over medium-low heat for about 20 minutes, or until the chicken is fully cooked. Add a few extra minutes for a larger chicken. Keep the liquid at a gentle simmer, not a rapid boil.
- Remove the lid, increase the heat to high and reduce the sauce.
