Ingredients

Instructions

  1. In a large pot, add the broth ingredients (everything except the sake and chicken). Cover, bring to a boil, reduce to medium and simmer for 30 minutes.
  2. Add the chicken and the sake to the pot, cover and simmer for another 20 to 25 minutes, until the chicken is fully cooked.
  3. Meanwhile, infuse the flavored oil: combine its ingredients in a saucepan and cook over low heat for 8 to 10 minutes. Remove from heat and let cool.
  4. Make the spicy miso tare: whisk the tare ingredients in a saucepan until smooth. Bring to a boil over medium-high heat, boil for 2 to 3 minutes, then remove from heat and set aside.
  5. Remove the chicken and shiitake from the pot. Squeeze the shiitake well. Turn off the heat and strain out all remaining solids from the broth, removing large pieces with tongs first and then fine bits with a small strainer.
  6. Let the chicken and shiitake cool enough to handle, then thinly slice the shiitake and shred the chicken into bite-sized pieces.
  7. Strain the flavored oil into a separate bowl and keep the clear oil. Add the leftover solids from the oil to the chicken and shiitake, discarding any large pieces of ginger and garlic. Add 2 Tbsp soy sauce, 1 Tbsp sugar and 1/4 tsp black pepper, mix and set aside.
  8. To serve, bring a pot of water to a boil for the noodles and bring the broth back to a boil. Cook the noodles according to the package and drain well.
  9. In a serving bowl, combine 1/4 cup spicy miso tare, 1 Tbsp flavored oil and 2 cups boiling broth. Add the noodles and stir to coat evenly.
  10. Top with kimchi, the chicken mixture, chopped green onions, ramen egg and nori, and sprinkle with shichimi if desired.
