Ingredients
- Beef8 oz
- Salt¼ tsp
- Black pepper · ground¼ tsp
- Soy sauce · smoked4 tsp
- Mentsuyu8 tsp
- Garlic3 cloves + 1 tbsp
- Vegetable oil1 tbsp
- Butter3 tbsp
- Rice · cooked2
- Scallion · finely chopped1 tbsp
Instructions
- Bring the day-old or frozen rice to room temperature, or cook fresh rice and spread it thinly on a parchment-lined tray to cool.
- Season both sides of the steak with the salt and pepper and leave it out for 20–30 minutes to reach room temperature.
- Mix the smoked soy sauce, 2 Tbsp mentsuyu and 1 clove of minced garlic in a bowl for the steak sauce.
- Mince 2 cloves of garlic. Heat 2 Tbsp butter in a pan over medium-low heat, add the garlic and cook for about 3 minutes, stirring often, until fragrant without browning.
- Put the rice in a large bowl, add the garlic butter, 2 tsp mentsuyu, the salt and the pepper, and toss gently.
- Heat a carbon steel or cast iron pan over medium-high heat, add 1 Tbsp oil, then sear the steak for 3–4 minutes per side, pressing it down, until it reaches 54.4°C (130°F) internally.
- While the steak sears, heat 1 Tbsp butter in another pan over medium heat, stir-fry the rice until hot, then spread it flat and leave it undisturbed until the bottom is crisp.
- Wrap the steak in foil and rest it for 2–3 minutes, then cut it into ½-inch cubes and toss them in the steak sauce.
- Place the steak cubes on the crispy rice, drizzle with any leftover sauce, and top with the chopped green onion and crushed fried garlic chips.
