Easy Strawberry Cake Recipe!
Ingredients
- Vegetable oil1 cup
- Buttermilk1 cup
- Egg4
- Vanilla4 tsp
- Sugar3 cups
- Flour2 cups
- Baking powder2 tsp
- Baking soda2 tsp
- Salt¼ tsp
- Strawberry4 cups
- Cream cheese16 oz
- Heavy cream3 cups
Instructions
- Preheat the oven to 350°F/177°C. Line three 8-inch (20 cm) cake pans with parchment and grease the sides with baking spray.
- In a large bowl, beat the oil, buttermilk, vanilla, eggs and sugar on medium speed for a few minutes, until the eggs are well beaten.
- In a separate bowl, combine the flour, baking soda, baking powder and salt. Sift them into the batter and mix on low speed for about a minute, just until no flour streaks remain.
- Divide the batter evenly among the three pans.
- Bake at 350°F/177°C for 23 to 25 minutes, until a toothpick inserted in the centre comes out clean and the tops are golden.
- Cool the layers in the pans for a few minutes, then invert onto a wire rack, remove the parchment and let cool right side up. Chill the layers completely in the refrigerator.
- Soften the cream cheese for about 15 minutes, then beat it with a flat beater for a few minutes, scraping the bowl now and then, until smooth.
- Add the chilled cream, vanilla and sugar. Switch to a whisk and whisk on low for about a minute, then scrape down the bowl.
- Keep whisking, gradually increasing the speed, for about 3 to 4 minutes until stiff peaks form.
- Put about 1 1/2 cups of the frosting into a piping bag fitted with a star tip (Ateco #847). Keep the frosting refrigerated if not using it right away.
- Dice about 2 to 2 1/2 cups of strawberries finely. Puree about 1 cup of strawberries in a food processor until fine, then pour into a measuring cup. Alternatively, mash the berries very well with a potato masher.
- Using a long serrated knife, level the tops of the completely cooled layers.
- Place the first layer on a cake stand and pour a few tablespoons of strawberry syrup over it. Spread a generous amount of whipped frosting evenly to the edges.
- Pipe a few dollops of cream along the edges if desired. Fill the centre with a generous amount of diced strawberries, then add the next layer and repeat.
- Top the cake with more whipped cream, frost the sides if wished, add cream dollops and garnish with whole and diced strawberries. Refrigerate to let the frosting set, or chill overnight; keep refrigerated.
