Easy Strawberry Pie
Ingredients
- Graham cracker · crushed12
- Sugar5 tbsp + ½ cups
- Butter · melted7 tbsp
- Cornstarch2 tbsp
- Strawberry · powder3 oz + 4–5 cups
- Heavy cream¾ cups
- Cream cheese · softened4 oz
- Maple syrup¼ cups
Instructions
- Preheat the oven to 350°F (175°C). Mix the crust ingredients, press into a 9-inch pie plate and bake for 10 minutes.
- Wash the strawberries, blot them dry, and hull them. Halve the large ones; leave small ones whole or halve some.
- In a small saucepan, whisk the sugar, cornstarch and cold water. Cook over medium-low heat, stirring constantly, until it starts to thicken. Once bubbling, cook for 2 more minutes. Stir in the Jell-O until dissolved, then let cool slightly.
- Arrange half the berries in the crust. Pour some glaze over them and move the pan gently so it settles around the berries. Add the remaining berries, cover with just enough glaze to hold them in place, and press them snugly together. Brush the top with glaze for a glossy finish.
- Refrigerate for 4-6 hours, uncovered until mostly set, then cover with plastic wrap.
- Beat the heavy cream to soft peaks with a hand mixer. In another bowl, beat the softened cream cheese until smooth, then slowly beat in the maple syrup until loose and creamy. Fold the cream cheese mixture into the whipped cream.
- Serve the slices cold, topped with a dollop of the whipped cream cheese.
