- Trimmings
- Vegetable oil1 tbsp
- Onion · roughly chopped1
- Carrot · peeled roughly chopped1
- Celery · roughly chopped2
- Chicken stock1 ½
- Soy sauce1 tsp
- Mixed herb1
- Bay leaf2
- Butter3 tbsp
- Flour¼ cups
Instructions
- Chop the turkey neck, gizzards and trimmings into 1-inch chunks.
- Heat the oil in a medium saucepan over medium-high heat until shimmering. Add the turkey pieces, onion, carrot and celery and brown them well, stirring now and then, about 10 minutes in total.
- Add the stock, soy sauce, herbs and bay leaves. Bring to a boil, then reduce to a simmer and cook for 1 hour.
- Strain through a fine-mesh strainer. Add any drippings from the roast turkey and skim off the excess fat.
- Check that you have a little over 1 quart of stock; if not, top up with water or more chicken stock to make 1 quart. Discard the solids.
- Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring constantly, until golden brown, about 3 minutes.
- Whisk constantly while adding the stock in a thin, steady stream. Bring to a boil, then reduce to a simmer and cook until thickened and reduced to about 3 cups.
- Season with salt and pepper to taste.
