- Maple syrup¼–½ cups + 3 tbsp

Instructions
- Preheat a large soup pot over medium heat, fry half the bacon until golden and crispy, then remove the bits and leave the fat in the pot.
- Fry the turkey in batches, seasoning lightly with salt and pepper, until well browned, breaking it up as it cooks. Set aside.
- In the same pot over medium heat, add a few tablespoons of butter, the onion and corn, and sauté for 7–9 minutes until the onion is translucent.
- Add the garlic, peppers and all the spices (salt, pepper, coriander, cumin, chipotle, paprika, oregano and basil) and cook for 1 minute.
- Add the crushed tomatoes, drained beans and broth, then return the turkey and bacon bits. Add ½ cup maple syrup and mix well.
- Cover and bring to a simmer over medium-high heat, then reduce to low and cook for 1 to 1½ hours, stirring every 20 minutes. Alternatively, cook in a slow cooker on high for 6 hours.
- Meanwhile, fry the remaining bacon in a medium pan over medium heat until golden and almost crisp, add a few tablespoons of maple syrup and cook 1–2 minutes until it sticks. Tilt the pan to drain the grease and scoop the bits into a bowl.
- Stir in chopped cilantro and green onions at the end, and add lemon juice to taste.
- Top each bowl with the maple bacon bits.
