Easy Turkey Meatloaf Recipe
Ingredients
- Olive oil4 tbsp
- Onion½
- Salt1 ½ tsp
- Garlic4 cloves
- Breadcrumb1 cup
- Milk½ cups
- Egg2
- Worcestershire sauce2 tbsp
- Black pepper · ground1 tsp
- Ground turkey2 lb
- Ketchup1 ½ cups
Instructions
- Preheat the oven to 325°F. Lightly grease a rimmed baking sheet with cooking spray.
- In a medium skillet over medium heat, warm 2 tablespoons of olive oil. Add the onion and ½ teaspoon of salt and cook, stirring now and then, until very tender and lightly browned at the edges, 6 to 8 minutes. Stir in the garlic and cook 2 more minutes. Take off the heat and move to a plate to cool to room temperature.
- In a large bowl, stir the panko and milk together and let stand 5 minutes.
- Stir the eggs, the remaining 2 tablespoons of olive oil, 1 tablespoon of Worcestershire sauce, pepper and 1 teaspoon of salt into the panko mixture. Add the cooled onion mixture and the turkey, and gently mix by hand until just combined, without squeezing the turkey. Shape the mixture on the prepared baking sheet into a 9x4-inch loaf.
- In a small bowl, whisk the ketchup with the remaining 1 tablespoon of Worcestershire sauce. Set aside 1 cup of this mixture, covered.
- Brush the loaf with half of the remaining ketchup mixture and place it in the oven.
- Bake for 30 minutes. Brush with the rest of the ketchup mixture and bake a further 30 to 40 minutes, until an instant-read thermometer in the centre reads 165°F.
- Take out and let the meatloaf rest for 15 minutes. Serve warm with the reserved ketchup mixture.
