Instructions
- Mix the flour, vegetable or olive oil and warm water in a large bowl with a wooden spoon until combined.
- Knead on a floured surface until the dough comes together, or use a stand mixer with a dough hook.
- Cover the dough and rest it for 30 minutes.
- Boil the halved potatoes in salted water until fork tender, then drain and cool them for a few minutes.
- Mash the potatoes and set them aside.
- Saute 1 chopped onion in 1 tbsp olive oil until translucent, then stir in the tomato paste and cook for 1 minute.
- Add the mashed potatoes, mix well, season with 1/4 tsp salt and 1/4 tsp black pepper, then turn off the heat.
- Saute 1 chopped onion in 1 tbsp olive oil over medium heat until translucent.
- Add 4 cups baby spinach, 1/2 cup dill and 1/2 cup parsley and cook until the spinach wilts.
- Add 1/2 cup feta cheese and cook for a couple of minutes.
- Season with 1/4 tsp salt and 1/4 tsp black pepper, then turn off the heat.
- Divide the rested dough into 8 pieces. Roll each piece into a thin circle that is not too large, spoon filling onto half of it, fold over and seal the edges.
- Heat about 2 tbsp vegetable oil in a pan large enough for one gozleme.
- Fry each gozleme undisturbed for 4-5 minutes until crispy, then flip and fry the other side for 4 minutes until cooked.
- Drain on a paper towel-lined plate.
