Ingredients
- Rice2 ¼ cups
- Kombu1 piece
- Rice wine vinegar0.83 cups
- Nori seaweed6
- Tofu1
- Cucumber2
- Carrot1
- Avocado2
- Lime
- Red onion½
- Mayonnaise¼ cups
- Sriracha sauce1 tbsp
Instructions
- Rinse the short-grain rice until the water runs nearly clear, then drain well and put it in a rice cooker pot. Add 2¼ cups water, level the rice and place the kombu on top (optional). Soak for 20–30 minutes, then start cooking.
- When the rice is cooked, remove the kombu and spread the hot rice in a sushi oke or on a parchment-lined sheet to cool faster.
- Pour ⅓ cup seasoned rice vinegar over the hot rice. Cut through it with a rice paddle at a 45-degree angle, fanning as you go, without stirring, until the rice feels warm. Cover with a damp towel at room temperature until needed.
- Thinly slice ½ red onion and cover it with ½ cup seasoned rice vinegar in a jar or bowl.
- Mix ¼ cup Kewpie mayonnaise, 1 tablespoon sriracha and a splash of lime juice in a small bowl.
- Halve the cucumbers lengthwise, scoop out the seeds and cut each half into 4 long strips. Julienne the carrot finely. Cut the tofu cutlet into long sticks. Just before rolling, halve the avocados, remove the pits and skin, cut into eighths and sprinkle with lime juice.
- Lay a sheet of nori shiny side down on a bamboo mat, long edge vertical. Spread 1 cup (150 g) of rice over it in an even layer, leaving a ½-inch (1.5 cm) strip uncovered at the top edge.
- Spread a thin line of spicy mayo about 1½ inches from the bottom edge. Top with 2–3 cucumber strips, 3 avocado slices and 2–3 tofu sticks. Add pickled onion on the avocado and carrot strips beside it. Do not overfill.
- Lift the bottom edge of the mat and roll tightly until the bottom edge meets the rice on the top. Pull the mat tight, finish rolling, then press the mat over the roll to set its shape. Cover with plastic wrap and keep in a cool place (not the refrigerator).
- To serve, cut the roll in half, then cut each half in half again, and cut the quarters in half once more to get 8 pieces. Wipe the knife with a damp cloth between cuts.
