Instructions

  1. Cut the garlic chives into 2-inch (5 cm) pieces, separating the tough bottom parts from the green leafy parts.
  2. Beat together the eggs, sake, soy sauce, Diamond Crystal kosher salt and black pepper in a medium bowl.
  3. Heat a wok or frying pan over medium-high heat. When hot, add the toasted sesame oil, then the tough chive bottoms, then the leafy parts on top.
  4. Stir-fry until slightly wilted, then transfer the chives to the egg mixture and mix to combine. Wipe out any food bits from the wok.
  5. Heat the neutral oil in the same wok over medium-high heat until it smokes at the edge and looks thin and runny.
  6. Add the egg and chive mixture. Let the edges puff, then stir only the centre quickly so the raw egg touches the hot pan. Do not flip it.
  7. When the centre has only a little runny egg left, divide it into 2 portions.
  8. Spoon the egg over 2 servings of hot cooked short-grain rice in donburi bowls and serve. Optionally, offer chili oil at the table.
