Instructions
- Mix the wonton filling ingredients (everything except the wrappers) in one direction with a fork or chopsticks until well combined.
- Place about 1 heaping teaspoon of filling in the middle of a wrapper, moisten the edges lightly with water, then bring the edges together and seal well.
- In a medium-large pot, combine the ginger, garlic, green onions, shiitake and chicken stock. Cover, bring to a boil, reduce to medium-low and simmer for 5 to 10 minutes.
- Meanwhile, cut the bok choy into quarters.
- Remove and discard the solid aromatics, keeping the shiitake; slice the shiitake and set aside.
- Season the soup with soy sauce and fish sauce.
- Cook the precooked egg noodles in the soup for 1 minute, then divide them between serving bowls. Cook the bok choy in the soup for 2 to 3 minutes until done, then place it on the noodles, and add the sliced shiitake.
- Add the wontons (5 per serving) to the soup and cook for 5 to 6 minutes. Taste and season with salt and pepper if needed.
- Pour the wontons and soup over the noodles and vegetables, and garnish with chopped green onions if you like.
